The Club Steak Provencale is inspired by French cuisine. Garlic, rosemary and thyme – the classic Provencal herbs – make this steak irresistible.
Preparation
Step 1: Marinate the Steak
Make a mixture of finely chopped garlic, rosemary, thyme and olive oil. Rub steaks with this. Let marinate 30 minutes to 2 hours for optimal flavor.
Step 2: Preheat the BBQ
Light the BBQ and let coals reach medium-hot temperature (220-250°C). Add some rosemary sprigs directly on coals for extra aroma.
Step 3: Grill the Steaks
Pat steaks dry and sprinkle with coarse sea salt. Place on hot grill and grill 3-4 minutes per side for medium-rare. Add butter to steaks in the last minute.
Step 4: Rest and Serve
Let steaks rest 5 minutes. Chop fresh parsley finely and sprinkle over steaks. Serve with a good glass of red wine from Provence.
Tips
- Use fresh herbs for best flavor – dried herbs work less well.
- Ask butcher to cut steaks slightly thicker (2-3 cm).
