Remove the T-bone 1-2 hours before cooking. Pat dry with paper towels. This is essential for a good crust. Rub with olive oil and season with coarse salt.
Step 2: Heat the BBQ
Light the BBQ and let the coals reach a very hot temperature (300°C+). The T-bone needs short, intense heat. Add hickory smoking wood for classic BBQ flavor.
Step 3: Grill the Steak
Place the T-bone on the hottest spot of the grill. Grill 4-5 minutes per side for medium-rare (52°C core). Turn only once. Place rosemary and garlic on the steak during the last minute.
Step 4: Rest the Steak
Remove the steak from the grill and let rest 8-10 minutes under aluminum foil. This is crucial – the juices distribute through the meat.
