Lamb BBQ Tips
Lamb has a distinctive, slightly gamey flavor that pairs perfectly with rosemary, thyme, garlic and mint. For the best results:
- Doneness: Lamb can be served rosé (52-55°C) to medium (60°C).
- Marinating: Olive oil, garlic, rosemary and thyme – at least 2 hours.
- Smoking wood: Rosemary branches or olive pits for a Mediterranean flavor.
- Resting: Let lamb rest 10 minutes for optimal juices.
