The entrecote is a classic, juicy steak that pairs perfectly with an aromatic thyme jus. Combine with roasted vegetables for a complete and elegant dish.
Preparation
Step 1: Prepare
Remove the entrecotes from the fridge 1 hour before cooking. Pat dry and rub with olive oil. Season with salt and pepper. Preheat oven to 200°C for the vegetables.
Step 2: Roast the Vegetables
Cut potatoes into wedges and parboil for 10 minutes. Mix with red onion, cherry tomatoes, olive oil and thyme. Roast 25 minutes until golden brown.
Step 3: Prepare the Entrecote
Preheat BBQ on direct heat at 250°C. Grill the entrecotes 3-4 minutes per side for medium-rare. Add thyme and garlic to the grill for aroma.
Step 4: Make the Thyme Jus
Sauté the shallot in the saucepan. Add red wine and let reduce. Add butter in cubes, stir until smooth. Add thyme and season.
Step 5: Serve
Let steaks rest 5 minutes. Place on warm plates with roasted vegetables. Spoon the thyme jus over the top.

- Measure core temperature: 55°C for medium-rare.
