Chicken Satay is a delicious Asian dish with tender, marinated chicken skewers and a creamy peanut sauce. Perfect for a summer BBQ or as an appetizer.
Preparation
Step 1: Marinate the Chicken
Cut the chicken breast into 2cm wide strips. Mix the marinade: soy sauce, lime juice, ginger, honey and cumin. Mix well and marinate the chicken for at least 2 hours (preferably 24 hours in the fridge).
Step 2: Make the Peanut Sauce
Stir all peanut sauce ingredients together in a bowl. Add coconut milk and stir until smooth. Season with extra lime juice or soy sauce to taste. Set aside.
Step 3: Thread the Skewers
Thread the marinated chicken strips onto wooden skewers (soak wooden skewers in water for 30 minutes beforehand). Divide the chicken evenly over the skewers.
Step 4: Grill the Satay
Grill skewers on medium heat (200°C) for 3-4 minutes per side. Chicken should be cooked through and lightly golden. Brush with some peanut sauce in the last minute.
Step 5: Serve
Serve the satay skewers with the remaining peanut sauce, finely chopped cucumber, spring onions and a lime wedge. Sprinkle some fried onions over the skewers.
Tips
- Marinate the chicken preferably 24 hours for the best flavor.
- Replace chicken with pork or tofu for variation.
- Add some sambal to the peanut sauce for extra heat.
