The Cowboy Steak is literally a 'big boy' among steaks – a thick ribeye with an impressive long rib bone. This is the steak to impress with!

Preparation

Step 1: Prepare

Remove cowboy steak from fridge at least 2 hours before cooking. Pat completely dry. This is crucial for a good crust. Rub with olive oil and sprinkle with coarse sea salt.

Step 2: Make the Herb Butter

Mix soft butter with finely chopped herbs and garlic powder. Roll in plastic wrap and refrigerate. This can be made ahead.

Step 3: Heat the BBQ

Light the BBQ and let it get as hot as possible (300°C+). Add hickory smoking wood for classic BBQ flavor.

Step 4: Grill the Cowboy Steak

Place steak on hottest spot. Cook 5-6 minutes per side for medium-rare (52-54°C core). Place rosemary and garlic on meat during last minute.

Step 5: Finish

Let rest 10 minutes. Slice into strips and place thick slice herb butter on each piece. Serve immediately.

Tips

  • Ask butcher specifically for a cowboy cut – this has a longer rib bone than normal.
  • This steak is perfect for sharing – plan 400-500g per person.
  • The crust can be dark – that's flavor!
