Light, fresh and full of flavor – this lemon herb chicken is perfect for warm summer evenings. The combination of lemon, garlic and Italian herbs makes this an absolute favorite.
Preparation
Step 1: Make the Herb Butter
Mix 50g soft butter with finely chopped garlic, zest of 1 lemon, rosemary and thyme. Season with salt and pepper. This is the flavor maker.
Step 2: Marinate the Chicken
Rub the chicken all over with the herb butter. Squeeze 1 lemon and rub the juice over the chicken. Place lemon slices and remaining herbs in the cavity. Let marinate 2-4 hours.
Step 3: Preheat the BBQ
Preheat the BBQ for indirect heat at 180°C. Place some rosemary branches on the coals for extra aroma.
Step 4: Prepare the Chicken
Tie the chicken legs together and fold wings back. Place the chicken on the indirect section with breast up. Close the lid and BBQ 45-60 minutes until core is 75°C.
Step 5: Finish
Remove the chicken from the BBQ and let rest 10 minutes under foil. Cut into pieces and serve with remaining lemon and drippings from the pan.
Tips
- Use a core temperature meter for perfect doneness – breast 74°C, thigh 80°C.
- For extra flavor: stuff the chicken with extra lemon and garlic.
- You can prepare the chicken in the morning for dinner.
