Fajitas are a party on the table – warm, full of flavor and perfect for sharing. The flank steak gives deep, smoky flavor to this Mexican classic.
Preparation
Step 1: Marinate the Steak
Mix oil with cumin, paprika and chili powder. Rub the flank steak with this. Let marinate for at least 30 minutes.
Step 2: Make the Salsa
Grate the tomatoes or chop finely. Mix with onion, cilantro and lime juice. Season with salt. Set aside.
Step 3: Grill the Steak
Preheat BBQ on high temperature. Grill the flank steak 4-5 minutes per side for medium-rare. Let rest 5 minutes.
Step 4: Roast the Vegetables
Slice bell peppers and onion into strips. Grill on the BBQ until tender and have nice grill marks.
Step 5: Serve
Slice the steak against the grain into thin strips. Warm the tortillas. Serve everything on the table and let everyone assemble their own.

- Flank steak is best when you slice it against the grain.
