Reverse Sear Ribeye
The reverse sear method is the best technique for thick steaks (3cm+). By first cooking slowly and then searing, you get a perfect, even doneness from edge-to-edge.
Requirements
- 2 ribeye steaks (250-300g each, 3-4cm thick)
- Coarse sea salt and fresh pepper
- Oil for searing
- Herb butter (optional)
- Meat thermometer
Preparation
Step 1: Remove steaks from the fridge 30-60 minutes before cooking. Preheat the BBQ indirectly to 120°C.
Step 2: Place steaks indirectly and cook to a core temperature of 50°C for medium-rare.
Step 3: Remove steaks from the BBQ and let rest. Heat the BBQ directly to maximum (250°C+).
Step 4: Sear the steaks 1-2 minutes per side for a perfect crust. Add herb butter just before serving.
Step 5: Let rest 5 minutes and serve. Enjoy the perfect medium-rare steak!
